Why I'm too BUSY this past WEEKEND???


January has ended.. And the most important month of the year is here.. Last weekend, I'm too busy baking and baking and baking to death... Cause it's my nephew's 5th birthday. His momz is too busy"my cousin ate Ann" for some important matters so I'm the one who she can lean on when talking about cooking. "A complement for me" :)) So I blog the food I cooked and some pictures of those.. I also write the below some ingredients who will need. First in the list.. APPLE PIE

What you need:How to make apple pie?


DOUGH-
1 1/2 cup all purpose flour
1 tsp salt
1 tsp baking soda
1 tsp baking powder
1/3 cup of milk
egg wash



FILLINGS-
6 different kinds of apple
1 tbsp cinnamon
1 cup sugar
1/4 cup honey
1/2 cup butter "frozen or melted"
2 tbsp flour
pinch of salt

INSTRUCTION-

FILLING
1. Cut apples into cubes.
2. In a large cooking pot put apple,sugar, cinnamon, butter, sugar, honey, dissolved flour and a pinch of salt.
3. Let it cook in a medium fire for about 15 minutes or until the
water comes out and become thick.
4. Let it cool and set aside.

DOUGH AND BAKING - Pre-heat oven at 375 degree F.
1. Spread butter on a pie pan. Then set aside.
2. Using a hand mixer, mix flour, salt, baking soda and baking powder.
3. Add milk and mix again.
4. Knead the dough, and when the dough is already smooth divide it into 2 and place it on a plastic wrapper then sealed it for 20 minutes.
5. Flatten the dough for the desired shape and thin you want using rolling pin.
6. Place the one part flatten dough to the pie pan.
7. Put the cooked apple.
8. Close it using again the 2Nd part of the dough. You can use your creativity and put design in your pie. For me I use the usual thing. Criss cross dough. And put some egg wash.
9. Place in the oven and bake at 375 degree F. for 30-40 minutes or until the pie is golden brown and the syrup of apple comes out.
10. Let it cool for about an hour and then enjoy your delightful apple pie to the fullest! :)



SECOND RECIPE - PIZZA

What you need:

DOUGH-
1 1/2 cup all purpose flour
1 tsp salt
1 tsp baking soda
1 tsp baking powder
1/3 cup of milk
bell pepper "green and red"
white onion
ham
quick melt cheese
pineapple tidbits
pizza sauce
ground black pepper
salt

INSTRUCTION-

1. Pre heat oven for about 350 degree F.
2. Butter the pizza pan and set aside.
3. Using the above instruction in making a dough. Flatten the pie o how you want your crust to be. Either thick or thin crust.
4. Spread your tomato pizza evenly.
5. Be creative on putting your toppings. Add a pinch of salt and black pepper.
6. Bake it at 350 degree F. for about 15 minutes.
7. Enjoy you melted cheese, hot pizza.
Optional: Add cayanne if you want hotter and spicy pizza. or just a hot sauce. YUM YUM

How to make Chocolate cake



MY FIRST CAKE EVER!!!!

Making cake with just a HAND MIXER

Yesterday I'm looking for some chocolate cakes recipes in foodbuzz.com and a cute and yummy looking chocolate caught my eye, and just my luck that i have all the ingredients that i need. :))
Believe me i'ts a very sweet and yummy cake ever.!! Perfect for a first timer .. :))

What you need -- chocolate cake

1 3/4 all purpose flour
1 1/2 cups of granulated sugar
1 1/2 cups of unsweetened cocoa powder
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1/2 tsp salt
2 eggs
1 cup milk
1/2 cup of vegetable oil
1 tsp vanilla or almond extract
1 cup hot coffee of water

STEPS:
1. Pre-heat oven at 350F degrees.
2. Grease 2, 8'' cake pan or place a non-stick paper.
3. In a large bowl mix all purpose flour, sugar,unsweetened cocoa,baking soda, baking powder and salt using a spatula until it swell mix.
4. Add 2 eggs, milk and vegetable oil then mix again until it became smooth.
4. Add vanilla extract and mix again.
5. Add hot coffee and using a spatula mix thoroughly.
6. Transfer to 2 cake pan and bake at 350F degrees for about 30 minutes. Check the cake using toothpick, a toothpick inserted in center should come out with just a few moist crumbs on it. Do not over-bake!
7. Remove the cake in an oven pan and put it up side down then let it cool for about 1 hour.

What you need for Frosting-

1 1/2 pack of softened not melted unsalted butter
2 1/2 cups of confectioners sugar
1 1/2 tablespoon of milk
1 tsp vanilla or almond extract
.red food color

STEPS:
1. Put the butter in a bowl and mix it until it smoothed.
2. Add the sifted confectioners sugar and mix gently for about 1-2 minutes or until the desired thickness have made.
3. Add milk and vanilla extract and mix again. "If the frost is too thin add more confectioners sugar and if is too thick add a little bit of milk.
4. Add some drops of food color of until u get the desired color you want.
5. Spread the frost in the cake. Be Creative :))

JOURNEY to THAILAND



Last December 7, 2010 my Auntie treated me to Thailand as a gift because I passed the Nursing Board Exam. That was my first out of the country ever.. And it became an unforgettable memories to remember :) We had a 6-day tour in Thailand.


First, after we arrived at Bangkok, Thailand we straight ahead in our reserve hotel "THE SIAM PLACE AIRPORT HOTEL" even though it was a little bit far from the center Bangkok, it was the perfect place for us, near to Paradise Mall, near to Airport, way nearer going to Pattaya :)).
The first whole day we just enjoyed the view of Thailand and had a very relaxing walked in Paradise Mall. My fist captured picture was the four faces Buddha, Thailand is so cool because of their amazing Buddhas.

And also I ate Thailand's delicacy,the sour and spicy noodles but sadly i really don't like the taste of their food.Our second day of our tour we went to Grand Palace, the most sacred place in Bangkok Thailand, were people can see the golden palace and the great great Buddhas, these places were very calm and sacred. I read some articles that visitors need to dress properly before they can enter the palace but very disappointing that some tourists did not respect the proper attire. And take note "this is the best place in Thailand".


For those who are shopaholic?? come and visit Thailand for their famous and very cheap shopping malls, like MBK Mall and the street night market, they also have designer clothes and stuff like Hermes, LV, Bvlgari just go to the Siam Center.. I assure you, you will max out your credit card in this place...

There are many cool places tourists really appreciate in Thailand,like the well known floating market, but HEY! there are many floating markets in Thailand but the best place is the Dameon Saduak Floating Marketthat if you want to go in this spot you must wake up so early and make sure that you're there before 11:00 AM because the closing time is until 11:00 am only. Tour in Thailand is not complete if you do not visit the famous floating market.There are also beautiful attractions like crocodile farm, tigers and elephant show that is only 20minutes far from the Floating Market so your whole day will not be waste and just enough to visit these famous tourist spots!

We also went to Pattaya Beach and I really fell in love in view of the beach,.

Citizens and those who visit Thailand said that Phuket is the most beautiful beach in Thailand, but Pattaya is also great.!. There are many activities you can do the whole day in Pattaya like- jetski, parasailang, banana boat and more.. But to have a very perfect tour in Pattaya beach you must go to the Coral Island, the white sand beach is the very much awaiting view in this beach. Very calm and relaxing place..A trivia for those who want to go to Pattaya, specially for boys-- hmm.. Pattaya is well known Night Life, girls-bars.. Boys will never forget their stay here in Pattaya. :)

To make my story short- I really enjoy the 6-Day tour in Thailand, and someday I will go back there and enjoy my stay to the fullest,again!!!! :)

Inspired by Chef John "www.foodwishes.com" I made a twist of his recipe, I combined the baby back ribs recipe and the bbq ribs, and the result?? YUM YUM -- deliciosio!!!!!

These past few days, I'm getting bored here in our house because I'm always alone so this is the result of my boredom!!!! As a past time I cook and bake and cook a lot!!!! and my mom and dad starting to complain about their weight, but even though they complain they really enjoy eating.. "they appreciate every little bite"..


-- Planning to bake a cake,.. I really wish i have a full packed gear kitchen, :(

LAZINESS

God gave us a reason to live.. :)

A couple of days ago, I'm staring to realize that Most of the time my parents went out and leaving me in this creepy house. And the fact that i have no job that's why i'm always here in front of computer wasting my whole day-week-month with nothing to do.. And technically maybe God gave me a huge spunk into my head.. "HELLO" aren't I'm too lazy not to find job or plan my life?? " Then realizing that God gave me life to use it in a proper way of living- live life to the fullest. Maybe tomorrow or after an hour I'm going to die and I have nothing to do with my life, because I am too lazy to do some productive stuff..

Life is beautiful, so i need not to sit back the whole day here in the computer searching for nothing, or just in Facebook looking for the status of those pathetic people... BE CREATIVE- FIND JOB- ENJOY LIFE!!!!!

and now after writing this blog-- i became inspired again :) thanks GOD!!! you ROCK!!!!

Gosh!!! I'm starting to get addict on baking.. specially i KNow the oven is quite new.. but I'm starting to realize that baking is much much expensive, specially here in Phil. dairy products are way much costly.. :(

CORN MUFFINS

My dad bought me an electric oven, cause she saw me really craving to have one. "You know me, im a trying hard cook, baker etc." cause I want to learn new things... So as a human to develop and grow.. It's almost 2 months that I never been writing here in my blog,.. and Inspired by my cousin Ayessa AKA Wi, I open it up again.. And noticing that every time I write here. I always remembering God.. Its ode but I appreciate how God really loves me for being so blessed. :) Anyways, before my tears fall down and goosebumps come.. I will start typing down about my first baking!!! YAHOO :)))
First, I just browsing here in the net about the recipe and I really Love chef John for inspiring me everyday " http://foodwishes.blogspot.com " check out his blog. I find his ways of cooking are very unique and cool and I'm really thankful that i found his blog.. And thanks also to my Aunties,
Cousins, Parents who appreciate my baking!! :) I put some pictures of how i baked and wondering if someone wants an evidence .. lol
